Unilife Resident Halloween Tips

Unilife resident Katie shares her ideas on what to do with left over pumpkins: take a break from studying and get creative

Take a break from studying and get creative with these ideas of what you can do with left over pumpkins after carving them, to create more Halloween fun at Unilife for the ultimate student experience.

 

Pumpkin Cupcakes

175 ml of sunflower oil
175g of light muscovado sugar
3 eggs
1 tsp vanilla extract
zest of one orange
200g grated pumpkin
100g sultanas
1 tsp bicarbonate of soda
200g self-raising flour
2 tsp cinnamon

200g cream cheese
85g icing sugar

These are quick and easy for students to make for a dozen tasty cakes.

To start pour 175 ml of sunflower oil, 175g of light muscovado sugar, 3 eggs and 1 tsp of vanilla extract into a bowl and stir. After this, add in the grated zest of one orange, 200g of grated pumpkin and 100g sultanas. Then stir in 1 tsp of bicarbonate of soda, 200g of self-raising flour and 2 tsp of cinnamon to the bowl. Add the mixture into 12 cupcake cases and bake for approximately 25 minutes. When they are done, take them out the oven to cool and prepare the frosting. For this you will need to mix 200g of cream cheese and 85g of icing sugar. Then add to the top of your cakes so they are ready to serve. This recipe is perfect to make in your studio.

 

Pumpkin Seed Snack

Make sure not to throw away the pumpkin seeds as they can also be used as a snack!

To do this you will need to wash and dry the seeds after removing them from the pumpkin. Start by spreading them over a baking tray. Then cover them in olive oil and roast in the oven for 10 minutes. They can then be used as a delicious snack to eat at the Unilife Halloween movie night for all students to enjoy.

 

Pumpkin Pancakes

200g of flour
½ tsp baking powder
100g of mashed pumpkin
1 egg
200ml milk

These are tasty and super easy to make, using only a few ingredients.

Simply add 200g of flour to a bowl and mix it in with ½ a tsp of baking powder then stir in 100g of mashed pumpkin. Separate one egg and just add the egg yolk to the mixture. After this has all been mixed in, gradually add in the 200ml of milk until you get a smooth texture. Whisk the egg whites until they reach a stiff peak and then fold that into the mixture. This will make over 20 mini pancakes or approximately 8 large ones.

Baking in the studios here at Sparkford House in Winchester is a breeze in your own private kitchen or start cooking in the Unilife communal kitchen which has all the appliances you need for these three simple recipes. Enjoy making these with friends to make it the ultimate Unilife living experience. Following this, we also enjoyed carving out our pumpkins in the communal area with friends to make Unilife look spookier in time for Halloween. We all did different designs such as haunted houses, scary faces and more. This is the best way to help all students relax and enjoy to make it the best student experience!
